Recipes for lettuce, spinach and radishes!!

It is the glorious time of year for greens!!  Please share what you do to make your spinach, lettuce and radishes come alive!!  When you share your recipes and stories, they will stay here but also be transferred to the recipe section of our website.  You can remain anonymous or preferably use your name and get the credit for your gourment talents!!

We LOVE salads in the summer made with mixed greens. This is one of my favorite dressing recipes.

Cranberry Dressing

1/4 cup red wine vinegar
1/4 cup fresh cranberries (or use frozen, just thaw first)
2 Tablespoons honey
1 Tablespoon sugar
1 Tablespoon chopped onion
1/4 teaspoon salt
1/4 teaspoon pepper

Blend in a blender until mixed well. While processing, add 3/4 cup oil (olive or vegetable) in a slow steady stream until well blended. Serve over lettuce/mixed greens.

We like this dressing best served with mixed lettuce, toasted walnuts, thinly sliced apple and grilled chicken or turkey.

Baked Radish Chips Recipe

Makes 1 serving

Yummy, very low cal snack -

Ingredients:
10 radishes
1 tsp chili powder
1/2 tsp garlic salt
1/2 tsp paprika

Directions:
Thinly slice radishes


Steam in microwave for 5 minutes


Put in bowl with spices; stir


Bake at 350 degrees for 10 minutes, flip the chips, and bake for another 10 minutes.

We love sandwiches. In the summer we opt for a healthier version. Lettuce wraps!

Large lettuce leaves

Ham, Turkey, Tuna Salad, Chicken Salad, or any sandwich filling

Cheese- american, provolone, or any sliced cheese

Put half a slice of cheese and a slice of meat on a leaf of lettuce, wrap and enjoy!

My sister-in-law, Toni, gave me this recipe several years ago and it remains a family favorite.

Spinach Orange Salad

1/2 pound spinach
1/2 head romaine
8 ounce can of sliced water chestnuts
8 strips of bacon, cooked and crumbled
6 green onions, sliced
11 ounce can of mandarin oranges, drained
1/2 pound fresh mushrooms, sliced
2 hard boiled eggs, minced

Dressing
1/2 cup sugar
1/3 cup wine vinegar
1 cup salad oil
1/3 cup catsup
1 tsp. Worcestershire sauce
Grated onion, to taste

Toss salad and add mandarin oranges just before serving.

Apple, Radish & Cucumber Dill Salad

This is a easy to make summer salad

4 large or 8 small radishes, sliced thin
2 Red or Golden Delicious Apples sliced thin
1 small or 1/2 large cucumber, peeled & sliced thin

Dressing:
1/2 cup of either sour cream or plain yogurt (greek works best)
3 Tbsp Lemon juice
2 Tsp Sugar or Truvia Sweetener
pinch of salt & a bit of pepper
2 Tbsp fresh dill or 2 Tsp dried dill

Mix the dressing in a medium size bowl and then stir in the apples, radishes & cucumbers.

Eat immediately or chill in the refrigerator.

"Green" your smoothie!

Sneak some spinach into your day by blending a handful in your blender with your smoothie.

I like to use this in my protein shakes along with some frozen mixed berries.

My family, with four small children, enjoyed using up the wonderful spinach mainly in green smoothies with banana and in scrambled eggs with other veggies.
